Please forgive my lack of aesthetics when it comes to cooking and photographing the food... If it's okay to be an ugly cute dog, it's definitely okay to be an ugly cute (and yummy!) pancake. I'll try to make it prettier next time, I promise...
For 3 thick pancakes you need:
- 30g coconut flour
- 100g cashew milk (or any other milk or milk-alternative)
- 1 table spoon honey
- 1 1/2 tablespoon cashew & cinnamon butter
- 2 eggs
- A pinch of salt
- 1/3 coconut oil
Approximate macros for the 3 pancakes: 20g protein / 24 fat / 33g carbs. 436cal.
Mix all the ingredients with a fork, apart from the coconut oil. The batter should be thick. Don't worry about lumps, as mixing it too much or in a mixer, will make these pancakes flatter.
Heat your pan on a moderate/high heat and place a touch of coconut oil before pouring your batter. As it will be thick, spread it evenly in a palm sized shapes and wait a couple of minutes before flipping.
These are quite filling and can serve as a nutritious meal, or an afternoon tea treat.
Coconut flour absorbs the liquid a lot, therefore play around with the ratios until you're happy with the final consistency and taste :)
